It is not a surprise that this culinary manual demonstrates the same level of quality and commitment you find from Paul Bocuse himself.Anyone in the culinary arts, regardless of experience level, will benefit from having this text in their library. I have an extensive library of culinary texts from Johnson & Wales, Culinary Institute of America and Wiley Press and they pale in comparison to this.Well organized, clear instructions and beautiful flow. The adage "a picture is worth a thousand words" certainly applies to this work with all the step by step photos included for each technique. If you cannot attend the Institute this is the next best thing!This should be required reading for all culinary programs! Home cooks don't be afraid, this will be one of your top reference sources as well.
I have waited for this compendium since the summer of 2004. And now it is in digital format which I can carry everywhere with me. Great book!!! Highly recommend!!!
When I got this book I started to read, and before I knew it I had read the first 100 pages. The instructions are clear and the pictures show the techniques in practice. I am an experienced cook and baker and a visual learner so this book is perfect for me. I wish Msr. Bocuse was still alive so I could write him a note of thanks. If you love to cook this is worth every penny.
I absolutely am in love with this book! So many pictures step by step of how to deconstruct, cut, clean, whatever it is in cookery you should be able to find it. The recipes are preferences, it wasn’t my favorite but everything else I adored!
An excellent reference volume. It is easy to follow and includes many basic recipes in the case of sauces, with many variations. Photos are helpful. The volume itself is elegant but sturdy and up to the use in the kitchen.
This is a good book to have in your library of cookbooks. It's a fun one to go through and see what you know or don't in a majority of French Cuisine recipes and techniques. Test yo self!!
This book doesn't offer many recipes, however your probably not buying it for that. What it does do is show you step by step, with great quality pictures, how to prepare so many noteworthy sauces, meats, grains, etc,. Its a great reference book
